This gluten-free recipe for Grilled Cajun Chicken with Avocado Corn Salsa is bursting with flavor and freshness. The juicy grilled chicken seasoned with Cajun spices pairs perfectly with the creamy avocado and sweet corn salsa, creating a deliciously satisfying dish.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • Salt and black pepper to taste
  • 2 avocados, diced
  • 1 cup corn kernels fresh or thawed if frozen
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • Salt and black pepper to taste

Instructions:

Preheat grill to medium-high heat

In a bowl, toss chicken breasts with olive oil, Cajun seasoning, salt, and black pepper until evenly coated

Grill chicken for about 6-7 minutes per side, or until cooked through and no longer pink in the center

While the chicken is grilling, prepare the avocado corn salsa

In a separate bowl, combine diced avocados, corn kernels, red onion, cilantro, lime juice, salt, and black pepper

Gently toss to combine

Once the chicken is cooked, remove from grill and let it rest for a few minutes

Serve grilled Cajun chicken topped with avocado corn salsa
