Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • Salt and black pepper to taste
  • 2 avocados, diced
  • 1 cup corn kernels fresh or thawed if frozen
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • Salt and black pepper to taste

Instructions:

Preheat grill to medium-high heat

In a bowl, toss chicken breasts with olive oil, Cajun seasoning, salt, and black pepper until evenly coated

Grill chicken for about 6-7 minutes per side, or until cooked through and no longer pink in the center

While the chicken is grilling, prepare the avocado corn salsa
