Lima Beans with Ham over Rice



Serve this filling and aromatic dish over fluffy rice, with perfectly cooked ham and tender lima beans in a flavorful broth.

Ingredients:

  • 2 cups dried lima beans, soaked overnight
  • 1 pound ham, diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 4 cups chicken broth
  • 2 cups water
  • 2 cups cooked rice for serving

Instructions:

The soaked lima beans, diced ham, chopped onion, minced garlic, dried thyme, bay leaf, salt, and pepper should all be combined in a big pot

Add water and chicken broth

Heat to a boil on a medium-high heat setting

Once the lima beans are soft, reduce heat to low, cover, and simmer for one to two hours, stirring periodically

Take out the bay leaf and taste and adjust the seasoning

Over cooked rice, arrange the ham and lima beans

If preferred, garnish with a dash of black pepper or fresh herbs

Savor your ham and rice with comforting lime beans!
