- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 1/2 cup whole milk
- For Whipped Vanilla Frosting:
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 2 teaspoons pure vanilla extract
- 3-4 tablespoons heavy cream
- Pinch of salt
Instructions:
Preheat your oven to 350F 175C and line a muffin tin with cupcake liners
In a bowl, whisk together the flour, baking powder, and salt
Set aside
In another bowl, cream together the softened butter and granulated sugar until light and fluffy
Add the eggs one at a time, beating well after each addition
Stir in the vanilla extract
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry mixture
Mix until just combined
Divide the batter evenly among the cupcake liners, filling each about two-thirds full
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean
Remove the cupcakes from the oven and allow them to cool in the pan for a few minutes before transferring them to a wire rack to cool completely
For the Whipped Vanilla Frosting, beat the softened butter until creamy and smooth
Gradually add the powdered sugar, vanilla extract, and a pinch of salt
Beat until well combined
Add heavy cream, one tablespoon at a time, until the desired consistency is reached
Continue to beat the frosting for 2-3 minutes until light and fluffy
Once the cupcakes are completely cooled, frost them with the Whipped Vanilla Frosting using a piping bag or a spatula
Decorate with sprinkles or any desired toppings
