Vegan Sushi Bowl



This Vegan Sushi Bowl offers all the flavors of sushi without the hassle of rolling. It's a vibrant and satisfying dish filled with fresh vegetables and sushi rice, drizzled with a tangy soy dressing.

Ingredients:

  • 2 cups sushi rice, cooked
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 1/2 cup edamame, steamed
  • 1/4 cup pickled ginger
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp maple syrup
  • 1 tbsp sesame oil
  • 1 tsp sesame seeds
  • 1 nori sheet, shredded

Instructions:

Gather soy sauce, rice vinegar, maple syrup, and sesame oil in a small bowl

Mix them together to make the dressing

Put layers of cooked sushi rice in a large bowl

Slice the avocado, cut the cucumber and carrot into thin strips, and add the steamed edamame to the rice

Pour the dressing over the bowl

Add sesame seeds, shredded nori, and pickled ginger as a garnish

Serve right away and enjoy!
